"Were" is used because it's a subjunctive mood. It's a non-realistic, hypothetical view. It's a situation that probably won't happen or can't happen. Ex: If I were you, I'd get a new outfit for your date. => hypothetical Ex: I'm sorry if the movie was offensive. => past conditional Ex: If I were rich, I would buy a new car.
