"If our bet proves anything" here is used to show that out of all the reasons for them to have the bet in the first place, it was for this one reason and nothing else. So this expression is used in a situation where someone is showing the final outcome or results from a bet. This specific expression is not really a general expression, however, it is common to say "if this (verb) + anything, it's that" something. Ex: If this work email means anything, it's that I'm about to get a raise!
