Can I say "All A's" instead "straight A's"?

Yes, you can. Since "straight As" here is signifying "all As" then you can interchange them. However please note that you cannot always do that. Ex: She had always been a straight-A student until she met him. The above sentence would sound strange if we switched it to "all As" because here straight A is referring to performance and not the literal grade.
