What would happen if I say "even better" instead of "better even"? Would it change the meaning of the sentence?

The meaning wouldn't change, but the structure of the sentence would have to change. The phrase "even better" would need to be followed by another sentence to compare two things directly. Whereas "better even" works as an afterthought or interjection to express emphasis at the end of a sentence! Ex: The curry at the restaurant was even better than Mom's curry! Ex: The new album was as great as the old one. Better even!
