student asking question

I think "Man" here is kind of like an exclamation. If so, can I say this towards woman as well?

You're correct in thinking that "man" is an exclamation (and doesn't have any real meaning). However, it's not addressed to any person - it's more of a reaction to express surprise, happiness, admiration, or to emphasize something. So you can use it in conversation with a woman, but keep in mind that this exclamation isn't used to address that specific person. It's similar to the use of "omg" as you're not addressing a person, but using it in reaction to something. Ex: Man, it's so hot today! Ex: Man, I missed the last train again!
