"Dead-end" is used to describe the end of a road or path with no exit, that there is no way to exit or leave. It can be used literally and metaphorically. When used as an adjective, like "dead-end jobs" here, it's used to mean that there is no hope or future in that job, that one cannot advance or grow if they work there. Ex: My friend told me that she felt trapped in her dead-end job. Ex: This road is a dead end. We have to turn around.
