Would it change the meaning of a sentence if I say "enhance" instead of "increase"?

It wouldn't change the meaning since "enhance" does mean to "increase". However, it would be unclear! It's not natural to say "enhance the temperature". I would say "enhance" is used less with measurement units and more emotively. Whereas "increase" and "decrease" are clear terms to use with units. Ex: The lights in the lounge enhance the style of the interior decor. Ex: The number of people had increased by the time we left. Ex: Kerry told me that this course will enhance my skills in the professional world!
