I've heard that the dynasty's name changed several times throughout British history. However, the House of Windsor was once called the House of Saxe-Coburg and Gotha. Why would they change the dynasty's name?

Ah, interesting question! So, you're right, "House of Windsor" was once "the House of Saxe-Coburg and Gotha." They changed it during the first world war because of the anti-german sentiment in the UK. In terms of the dynasty names, they changed when different rival factions in the family would take over the throne. So I supposed it showed each of their own mark and control in the dynasty name change.
