"Perfection" in this case is a noun while "perfect" is an adjective. "Perfection" indicates a state of being completely perfect or in the highest degree of excellence. The expressions "that was perfection" and "that was perfect" are similar, but "perfection" expresses an even stronger meaning of being perfect. "That was perfect" would also describe some object or some noun as being "perfect", while "that was perfection" describes a situation being perfect.
