More literally, to "come unwound" means to unwind from a tight or coiled position. This can refer to a ball of string or something rolled up or coiled up. When talking about emotions, and people, it means that they are releasing their emotions. As if their emotions were tightly wound up, like string would be, and then suddenly released. Ex: You seem like you're all wound up. You need to relax. Ex: The mother came unwound when she heard the baby crying late at night.
