Here, "undertake" means to commit to doing something. It becomes a responsibility. Another meaning is the act of "undertaking" a car - when you pass or catch up with another vehicle on the inside, opposed to overtaking, which is when you speed up on the outside lane to go ahead of the vehicle. Ex: I'm undertaking a big project at work currently. Ex: She undertook the soccer club. Ex: It's illegal to undertake here! => in a vehicle
