The only difference between these two phrases is "one way" indicates that there is only one option available. "A way" indicates that there is more than one option available. However, both phrases are used fairly interchangeably, regardless of the amount of options that are present. Keep in mind, that these two phrases aren't always interchangeable. It depends on the context of the sentence. Ex: Don't worry, there is a way to help out. Ex: I can only think of one way to get there. Ex: I'm sure we'll find a way to solve this issue.
