Should not put "that" after "And"?

You can put "that" after "and." The speaker has chosen to omit it here, but "and that Tigress is flammable" and "and Tigress is flammable" both work well here. Ex: I learned today an ostrich's eye is bigger than its brain. Ex: I learned today that an ostrich's eye is bigger than its brain.
