The phrase "once in a century talent" is not by itself a common phrase, however, "once in a century" followed by a noun is a common phrase. "Once in a century + noun" refers to something which is unique as if it only occurred once in an entire century. You can also use the phrase "once in a lifetime". Ex: It was a once in a century kind of love. Ex: She's a once in a century girl.
