The word "type" is a noun in both cases and so there is not really a difference in meaning between "the type of restaurant" and "the restaurant type". However, it is not common to say "the restaurant type, especially in this context. When describing something which is a type of something else, it is most natural and most common to use "type of". Ex: Those are the type of shoes you wear for running. Ex: He's the type of person who always makes people laugh.
