"Play out" means the end result; to see how things develop. In this video, the narrator is saying that the end result of this virus (how many contract the virus and die from it) depends on us and if we stay home and use social distancing as a tool to help stop the spread of the virus. Here are some more examples of "play out" being used: Ex: I wonder how their relationship will play out. Ex: Do you think this job will play out well? Ex: I think this idea will play out well.
