When we use the phase "know one's way around something" to mean that you are very familiar with a place, subject, or system, and therefore are able to act or use it effectively. So in this clip Cobb's saying that he needs to be very familiar with Saito's mind. Ex: She really knows her way around London. Ex: He really knows his way around an engine. Ex: Don't worry, they know their way around computers.
