The phrase "quite something" is used to refer to something which is very interesting or impressive. In the case of the video, Ellen is using this expression because his beard is impressive, however, sometimes this expression can also be used in a sarcastic way towards something which is very weird. You can also say "really something" instead of "quite something" which has the same meaning. Ex: Her hat is quite something. Ex: Wow, that house is really something.
