"Even" here is used as an adverb to emphasize something surprising. In the case of the video, it is surprising that he can't count the slices of pizza, so he uses "even" to express that he can't count. Ex: She's so behind in school, she doesn't even know how to read! Ex: The dog is so small, he isn't even as big as my shoe.
