What's the difference between "I really like" and "I do really like”?

The word "do" here is used as affirmation and for emphasis. It is most common to use "do" in this way when responding to a question, however it can also be used as a statement for emphasis even though this is not as common. "I do really like" is the same thing as saying "I really like", however, it gives a bit more stronger implication because of the word "do" adding emphasis on "like". Ex: A: Do you like tea? B: I do like tea! Ex: I do really like dogs.
