Can I use plural noun, “personalities” here? Why does he just use “personality”?

For this particular sentence, no. This is because someone is singular so personality has to also be singular. If they were referring to more than one person, then yes. Personality would be personalities. Ex: She has an amazing personality. Ex: They all have different personalities.
