Native speaker’s answer

Rebecca

"Be-ith" is considered Old English. Words like "be-ith" were used during the Renaissance period or maybe even prior. It is no longer used and may have a similar meaning of "is." It may have been used in Shrek either to fit the time period of the movie, or maybe to bring comedy into the scene.
