Great question. If you "knock up" something, you make it or build it very quickly, using whatever materials are available. So Gordon is saying he's going to quickly make a salad. "Knock up", as it is used in this video, is a very common phrase in British English. Ex: Could you knock up some scrambled eggs for me? Ex: I'm just going to knock up a meal. Ex: You can tell you just knocked go this bookcase.
