What does "surprise" mean? Can I use "recommendation" instead?

Actually, in this video, Ice Bear does in fact want a surprise, something that he does not expect. He doesn't want a recommendation from the lady serving ice cream. If he wanted a recommendation, he would ask her for ideas on what kind of ice cream she likes and then maybe pick from that. He just wants her to pick a type of ice cream for him. In this instance, you would not be able to use "recommendation" instead.
