Would the nuance of this sentence change if I just say 'we can make more', not 'we can make some more'?

Good question. There is no real difference between the use of "more" or "some more". The use of "some" is more natural and feels less formal however, if it were to be removed from the sentence, there would be no impact to the sentence meaning. Ex: Do you want more soup. = Do you want some more soup? Ex: I need more flour. = I need some more flour.
