"Umami" is a Japanese word meaning "savory" and is the fifth basic taste alongside sweet, sour, salty, and bitter. If you can imagine the taste of foods like mushrooms, anchovies, some types of mature cheeses, and food seasoned with MSG, you can imagine what "umami" tastes like. Ex: Rather than spicy or sweet foods, I prefer food with an umami taste. Ex: Some people describe umami as a "meaty" or "broth-y" flavor.
