"Stay behind" means to keep remaining in the back or behind someone. Here it refers to the wind continuing to blow the sail on her boat in back of her while she is on the boat. If the sail stays behind her with the wind blowing in it, she will be able to sail her boat successfully and get to where she needs to go.
