It's used to introduce a statement that explains the reason for something (in the case of this video, the fact that the two people's desired dates are not available). "Considering" can also be used in the place of "seeing as" here. Ex: Seeing as it's raining today, why don't we postpone our hike to another day? = Since it's raining today, why don't we postpone our hike to another day? Ex: Seeing as it's the weekend, we should go out and do something fun. = Since it's the weekend, we should go out and do something fun.
