"Too many to name" is a way of saying that there are too many things to list. We say "name" to mean that there are too many things to say the individual name of each of them. In this case it would be the individual name of every country. Ex: I have watched too many movies to name. Ex: I can cook all kinds of dishes. There's just too many to name.
