This is a colloquial speech variant. The show is set in Lincolnshire in the north of England. As such the characters speak with an accent and have some local sentence structure differences. Many people in the north of England will use "were" instead of "was" in conversation. It is best to treat this kind of slang. While it is common in speech it is not considered a correct grammatical form and should not be written as such. In this speech (colloquial) the phrase "I think I were 5" is correct and simply means "I think I was 5". He is looking at the picture and telling her that he believes it was taken when he was 5 years old. "If" is not skipped and is not necessary for the sentence.
