The artist has not omitted any words after "will." Technically, he could have added a verb after, such as "call" as mentioned in the previous line ("'Cause I can't reach out to call you, but I know I will one day, yeah"). However, he has not done so as that would make the sentence long and a bit repetitive. "But I know I will one day" is fine on its own. Ex: I haven't gone to work yet. But I will. Ex: I wish I could stop smoking. But I can't.
