Good question! Evening is more specific, and refers to the hours between 6 PM and 10 PM. Meanwhile, "night" is the opposite of "day" and thus refers to anytime the sun is not over the horizon (i.e. when it is dark outside). Thus, it can be evening and night at the same time (i.e. 8 PM at night, which is also in the evening). Ex: Do you want to grab dinner together this evening? Ex: I have many things to do this evening. Ex: I like to talk walks outside at night. During the day, it's too hot.
