For "Pocanos", I believe he is referring to The Poconos Mountains in Pennsylvania. "Flipper" is the dolphin on the TV series "Flipper". The security guard is sarcastically saying "If you lived with a monkey, then I have a time share with Flipper" to indicate that he doesn't think he really lived with a monkey, so stop asking to see him (the monkey).

Here particular is being used as an adjective referring to a specific thing rather than others. Therefore some good synonyms in this particular context would be "special", "specific" or "certain".

When he says, "yes, it's really me, Maui, breathe it in", "breathe it in" is meant in a similar way to "let it sink in.", which means to 'understand or accept'.
