Can I use "until" instead of "through" here? What is the difference between those two words?

Unfortunately, "until" cannot be used instead of "through" because these words do not have the same meaning. "Until" refers to the beginning of a time frame, therefore "until May" means "by May 1st". "Through" refers to the end of a time frame, therefore "through May" means "until the end of May".
