Is it different between "the month of May" and just "May"?

"May" and "the month of May" mean the exact same thing. The only difference is that "the month of May" adds extra emphasis on the entire month as a whole, whereas just saying "May" could be any unspecified date within "May", Ex: I am going on vacation in the month of May. Ex: I am going on vacation in May. The first example indicates that the speaker is going on vacation the whole month of May, while the second example implies that the speaker will go on vacation sometime during May, but it may not be for the entire month.
