I suppose a "shepherd" refers to a man who takes care of sheep, and "goatherd" for goats, then what do I call a guy who takes care of cows? A cowboy?

You're right! Most commonly, a worker who takes care of cows is called a cowherd, cowhand, cowpoke, or puncher. The men are most often called cowboys or cattlemen. Ex: The cowboy watched over his cows on a horse. Ex: Jesse James is one of the most famous American cowboys in history, and many films have been made about him.
