To be "impressed" with something means to be "amazed", "excited", or "surprised" about it. So "quite impressed" means to be pretty amazed with something. Thus there are many other words and expressions you can use to express the same meaning as "quite impressed" such as "pretty amazed", "pretty excited", "pretty surprised", and more. The word "impress", however, is pretty unique and so would probably be the most common to use in this context.
