To be "filled with" something generally means that something becomes so full or there are so much put inside of it that it cannot hold anything more. In this case, however, "filled with" refers to having a lot of something, so in this video it means that London has a lot of iconic symbols. Ex: This town is filled with trash. Ex: His house is filled with animals. Ex: I am filled with joy because my granddaughter was just born.
