Is it ok to omit "a" before "meatball" and just say "a half meatball" here?

You can do that, but I do not recommend omitting "a" before "meatball." It doesn't make the sentence incorrect necessarily, it just sounds odd in spoken English. Normally we'd say what was said in the clip or "I had half of a meatball sub in there."
