"As" is used in a way similar to "like" is. We can understand the speaker as meaning that every one will die at one point, and that is the way it should be (as/like it should be). It functions to add emphasis on a particular idea, which in the case of this video, is that death is something that is important to people. Ex: Our family rule is that everyone must celebrate Christmas together. And that is as it should be. Ex: The constitution protects the human rights of all citizens, as it should.
