"What a night" is an exclamation to show that a person had an enjoyable, exciting, or tiring night. It is not being used sarcastically here, she is reading about the fact that her mother had a very exciting time. You can use "what a night" sarcastically or genuinely. Ex: A. All I did was watch TV and sleep. B. Wow! What a night you had. A. I know, it was very boring. Ex: What a night! The party was great.
