Unless "early start" is followed by a time indicator (tomorrow, next week, etc.), it must always be followed by "to." Omitting the "to" was make the sentence grammatically incorrect. Ex: She got an early start to competitive skating as her mom was a skating coach. Ex: Go to sleep soon. We have an early start tomorrow.

"Go-to" means something that is commonly chosen over another. "Go-to" can apply to pretty much anything: food, people, places, etc. You can definitely use this with another word!
