Why are "lettuce" and "cucumber" not in plural form here?

"Lettuce" is an uncountable noun, and so the plural form is still "lettuce", however, "cucumber" is countable and not in the plural form. It is common when listing ingredients in a recipe to list everything in singular form as a single ingredient, although it is plural when it is added in to the mixture. Often the last couple ingredients when listing items of a recipe are put in singular form, while the first may be plural. There is no general rule for this. Ex: The omelette is made with mushrooms, tomatoes and egg.
