Something done "in someone's honor" means it is done to "respect" the person. Sometimes something is done "in someone's honor" when they are not able to do something themselves or attend an event. Ex: The service was done in honor of our Veterans. Ex: Since my friend couldn't make it to the dinner, I ate a meal in honor of him.
