Both "mind" and "care" can mean to have an interest, concern, or to feel an importance for something, however, they usually have different nuances, and "care" is often stronger. For example, if you say, "I don't care", it means that you don't have a concern or an interest in something at all. But if you say, "I don't mind", it just means that you are allowing something to happen, but it doesn't always mean you don't care about it. "Mind" is also more polite than "care" in this case.
