"Night after night" means countless of nights; doing something almost every night for a long period of time. And yes! You can say "day after day." It essentially has the same meaning, but during the day instead of in the evenings. Ex: Day after day, the dog waited for his owner to return. Ex: Night after night, she struggled to fall asleep.
