I only know of "challenge" as a noun, but when it's used as an adjective, does it mean like "hard?"

That's right! If something is "challenging" it is difficult, testing, or "hard." Ex: The hike was really challenging. But we made it to the top! Ex: My lecturer said the test will be challenging, so we need to study hard.
