Here, "a lot to take (in)" means something like "overwhelming" or "a lot to deal with." Joey is trying to explain in a nice way that Janice's personality is a bit overwhelming for him to deal with. Ex: It's a lot to take in (overwhelming). I need to sit down and think about what you just told me. Ex: I can't keep up in school. It's too much information for me to take in.
