Would there be a difference in meaning to say just "I did it!" instead of "I've done it!" here?

I would say that there isn't much of a difference in meaning between the two, except that "I've done it" is slightly more formal in feeling. Ex: I've done it! I finally developed the technology I've been working on! Ex: I did it, I passed the bar exam!
