Why does the speaker use "we" as the subject when there is only one person? Is it because she came to snowboard with others?

This is a good question! Sometimes, even if someone is just talking about themselves, they may use "we" to indicate that the person they are speaking with is included in this/a future action, or just to seem more friendly and inclusive. However, you don't need to use "we" like this! You can use "I" just fine in situations when you are just talking about yourself. Note that the expression "we'll see" is used when you want to say that something is yet to be set or determined. It's not talking about a group of people specifically. Ex: We'll see how hot it gets tomorrow, I heard it will reach 35 degrees Celsius. Ex: A: Are you going to see a movie tomorrow? B: We'll see. It depends on when my class ends.
